Ingredients:

1 tablespoon

apple cider vinegar
1/2 teaspoon

baking soda
1 tablespoon

brown sugar
1 - 1/2 tablespoons

coconut oil
2 tablespoons

rolled oats
1/4 teaspoon

salt
1

soymilk
2 tablespoons

wheat bran
1 - 3/4 cups

whole wheat white flour

Instructions:

  1. Preheat your oven to 425F and line a baking sheet with a silicone baking mat or parchment paper.

  2. Place the flour, bran, 2 tablespoons oats, sugar, baking soda, and salt in a mixing bowl and whisk to combine.

  3. Add the oil (solid or liquid) and whisk until well distributed and a coarse meal forms. Break up any sizable clumps.

  4. Place the vinegar in a measuring cup and add enough milk beverage to make 1 cup.

  5. Pour into the flour mixture and stir until a soft, slightly sticky dough forms.Dump the dough out onto your prepared baking sheet and with damp hands, shape it into a round.

  6. Cut an "x" across the top of the loaf (about -inch deep) and sprinkle the loaf with the remaining 1 teaspoon oats.

  7. Bake the loaf for 30 to 35 minutes, or until lightly browned.
