Ingredients:

1 cup

brown sugar
3 cans

canned coconut milk
1/2

vanilla bean
2 tablespoons

vanilla extract

Instructions:

  1. Combine all ingredients in a medium sized pot and heat over medium low heat until sugar has completely dissolved.Refrigerate until cool then process in your ice cream maker according to the manufacturers instructions.

  2. Place in a container and cover with a piece of parchment paper directly on the ice cream to help prevent any ice crystals from forming.Freeze for at least 2 hours in your fridge.Enjoy!
