  1. Preheat the oven to 200C/Gas6/fan oven 180C. Put oats, coconut,sugar and pumpkin seeds on a largebaking tray with sides, ideally nonstick.

  2. Mix in sugar and break uplumps with fingers, then add nuts.

  3. Bake for 15 minutes, stirringevery 5 minutes, until sugar startsto melt and nuts are lightly toasted.Tip into a big bowl and leave to cool.Snip bite-sized pieces oftropical fruits into the mixture.
