Ingredients:

avocado
1 cup

cilantro
4 cups

cucumbers
1 tablespoon

garlic
1

green bell pepper
5 tablespoons

olive oil
1

red bell pepper
7 servings

Salt & Pepper

stevia
5 tablespoons

white distilled vinegar
2 tablespoons

yellow onion

Instructions:

  1. Toss together in a large bowl the cucumbers, bell peppers, cilantro, onion, and garlic.

  2. Pour the oil and vinegar over the top and season with lots of salt and pepper and the stevia. Cover and refrigerate until ready to serve.If desired, add avocado just prior to serving and toss.

  3. Serve using a slotted spoon as much water drains out of the cucumbers.
