Ingredients:

avocado
4 cups

boston lettuce
11 ounces

canned mandarin oranges
3/4 teaspoon

chives
1/2

cucumber
3/4 teaspoon

fresh parsley
1

garlic clove

ground pepper
1 tablespoon

lemon juice
1/2 cup

olive oil
1/4 cup

olives

plum tomatoes
3 tablespoons

red wine vinegar

salt

Instructions:

  1. In a small bowl, whisk the first seven ingredients. Gradually whisk in oil. Set aside.

  2. Divide lettuce among six serving plates. Top with tomatoes, avocado, cucumber, oranges and olives.

  3. Drizzle with dressing.
