Ingredients:

15 ounce

canned black beans
3/4 cup

carrots
1 cup

corn kernels
1/2 teaspoon

dried thyme
1/3 cup

fresh parsley
1/4 teaspoon

garlic powder
8 ounce

mushrooms
3/4 cup

onion

pearl barley
1/3 cup

quick cooking oats
some

salt and pepper
1 - 3/4 cup

vegetable broth

Instructions:

  1. Preheat oven to 350 degrees Fahrenheit.In a casserole dish, combine all ingredients. Cover tightly with foil and bake in preheated oven for one hour to 1 hour and 20 minutes, stirring every 30 minutes or until barley is cooked through and tender.Keep covered with foil until ready to serve.
