Ingredients:

bell pepper
2 cups

fresh corn
2

garlic cloves
1 cup

green beans
1 cup

lima beans
1 Tablespoon

olive oil

onion

ground pepper

tomatoes
1/4 cup

water

zucchini

Instructions:

  1. Heat the olive oil in a large skillet on medium high heat.

  2. Add the onion, season with salt and pepper and cook for 3-5 minutes, until the onion is tender.

  3. Add the green beans, garlic and the bell pepper, season with salt and pepper and cook for another 1-2 minutes.Deglaze the skillet with water or broth, cover the skillet and cook for 3-5 more minutes, until the green beans have softened but are still vibrant green.

  4. Add the tomatoes, season with salt and pepper and cook for another 3 minutes.

  5. Add the zucchini, lima beans and corn. Season with salt and pepper and cook for another 3-5 minutes, until all the vegetables are cooked to your liking.
