cremini mushrooms
2 tablespoons

fresh parsley leaves

kosher salt
1/4 cup

olive oil
1/2 teaspoon

1/4 cup

red onion
1/4 teaspoon

red pepper flakes
1/4 cup

white wine vinegar


  1. In a large pot of boiling salted water, cook mushrooms just until tender, about 3-4 minutes; drain well.In a large bowl, combine mushrooms, olive oil, vinegar, red onion, garlic, sugar, oregano, peppercorns, red pepper flakes and bay leaf; season with salt and pepper, to taste.

  2. Transfer to an airtight container and place in the refrigerator for at least 8hours and up to 5 days.

  3. Serve at room temperature, garnished with parsley, if desired.
