Ingredients:

celery stalks
1 cup

chickpeas
1 clove

garlic
2 cups

green beans
1 pinch

ground cumin
1 tablespoon

mirin
1/2

red onion
3 handfuls

rocket
2 servings

salt and pepper
1/4 cup

sunflower seeds
1 tablespoon

white miso
1 tablespoon

white wine vinegar

Instructions:

  1. Steam or blanch the beans in a saucepan of simmering water until tender.

  2. Drain and set aside to cool.

  3. Combine all of the salad ingredients in a large bowl and toss to combine.

  4. Add all of the dressing ingredients to a small bowl or jug and whisk to combine. Season with salt and pepper to taste.Just before serving add the dressing to the salad, about half at first, and toss to combine.

  5. Add additional dressing until it's dressed to your taste.
