Ingredients:

30 ounce

canned lentils
3 cups

cooked rice
1/4 cup

fresh parsley
1 teaspoon

kosher salt
1 tablespoon

lemon juice
2 tablespoons

olive oil
1

red onion
some

rice

scallions
1

tomato

Instructions:

  1. Mix rice with scallions. Set aside. In a saucepan over medium heat, saute 1

  2. red onion in olive oil for 3 minutes.

  3. Add lentils, tomato, and salt and cook until heated through, about 2 minutes.

  4. Remove from heat and stir in lemon juice and parsley.

  5. Serve over the rice.
