Ginger Peanut Stir Fry is :

Heat wok or non-stick frying pan over high heat.
Add oil, swirling to coat the pan.
Add peanuts, onion, celery, and carrots. Stir to coat with oil, and sauté 3-5 min over high heat.
Add squash, mushrooms, ginger, and soy sauce. Stir to mix, and continue to sauté for 3-5 min, stirring often.When carrots are still crisp, but slightly tender, stir fry is finished.
Serve over steamed rice.
