Ingredients:

1 tsp

candied ginger
1 Tbsp

canola oil
1/3 c

carrot
1/3 c

celery
1 c

cooked rice
1/2 c

onion
1/2 c

peanuts
1 tsp

soy sauce
1 c

squash
4

white mushrooms

Instructions:

  1. Heat wok or non-stick frying pan over high heat.

  2. Add oil, swirling to coat the pan.

  3. Add peanuts, onion, celery, and carrots. Stir to coat with oil, and sauté 3-5 min over high heat.

  4. Add squash, mushrooms, ginger, and soy sauce. Stir to mix, and continue to sauté for 3-5 min, stirring often.When carrots are still crisp, but slightly tender, stir fry is finished.

  5. Serve over steamed rice.
