Ingredients:

cauliflower
3 tbsp

curry paste
3 tbsp

desiccated coconut
2

garlic cloves
1 piece

ginger
200 g

lentils
1

onion
1 tbsp

vegetable oil
1 - 1/2 l

vegetable stock

Instructions:

  1. Heat the oil in a large saucepan, thenadd the onion, garlic and ginger. Cookfor 5 mins, add the curry paste, thenstir-fry for 1 min before adding the lentils,stock and coconut. Bring the mixtureto the boil and simmer for 40 mins oruntil the lentils are soft.During the final 10 mins of cooking, stirin the cauliflower to cook. Spoon rice into4 bowls, top with the curry and sprinklewith coriander leaves, and coconut if youlike.

  2. Serve with mango chutney and naanbread (optional).
