Ingredients:

2 cups

bay leaves
1

cucumber
1 - 1/2 cups

edamame
1

green onion
1 Tbs

low sodium soy sauce
2 cups

mizuna
2 Tbs

seasoned rice wine vinegar
3 Tbs

sesame oil
some

sesame seeds
2 Tbs

tahini
8 oz

tofu

Instructions:

  1. Whisk together sesame oil, tahini, vinegar and soy sauce in small bowl.

  2. To make Salad: Cook edamame according to package directions. Rinse under cold water to cool.

  3. Drain well.

  4. Divide edamame, tatsoi, mizuna, cucumber, tofu and green onion among 4 plates.

  5. Drizzle with Sesame Dressing. Sprinkle with sesame seeds, and serve.
