26 - 1/2 ounce

canned black beans
2 cups

cooked quinoa
2 cloves

1/2 teaspoon

ground cumin
2 tablespoons

olive oil


orange pepper
1 pinch

salt and pepper


yellow bell pepper


  1. Heat the oli in a large skillet over medium heat.

  2. Add the onion and peppers and cook, stirring frequently, until softened, 3-5 minutes.

  3. Add the garlic, salt and pepper and cook, stirring 2 minutes more.

  4. Add the cumin and black beans and cook, stirring occasionally, about 3 minutes.Stir in the cooked quinoa.

  5. Remove from the heat. Dividing evenly, top the tortillas with the quinoa and black bean mixture and fold edges over like a package.

Burrito can be paired with Pinot Noir, Riesling, and Sparkling rosé. Acidic white wines like riesling or low-tannin reds like pinot noir can work well with Mexican dishes. Sparkling rosé is a safe pairing too.
