In a large saucepan over medium heat, warm the olive oil.
Add the onions, garlic, and carrots. Cover and cook until the onions have softened, stirring often, for about 10 minutes.
Add the vegetable stock, lentils, potatoes, bay leaves, oregano, coriander, and cayenne. Turn the heat to high and bring all to a boil. Reduce heat to low, cover and simmer for about 30 more minutes, or until lentils and potatoes are cooked through.Season with salt, pepper, and vinegar.
Garnish with parsley and serve.
